Pork loin cubes in Tamarindo – Tequila -Cacao Sauce

Ingredients:
For 4 portions:
400g Porloin, cute in big cubes
2 Spoon Olive Oil
1 tsp. Kua Kama – Seafood
1 tsp. Kua Kama – Meat
1tsp. Tamarindo paste
1EL Honey
1 shotglas of tequila
Method:
Mix the Kua Kama – Seafood & Meat spicemixes together with the olive oil.
Than work theminto the porkloin cubes and let marinate for 3 hours best over night.
Heat a saucepan and sear the porkloin form all sides.
Reduce the heat and add the tamarinde paste and honey. Deglaze with the tequila.
Serve with Safran rice.
Shop finly equal parts of celery sticks, onion and carrots fry them with 1 garlic clove in a litle bit of olive oil.
Add the rice and double amount of water and season with Salt and Safran.
Bring to boil on small flame and let boil for 1 minute or until water evaporated. Than switch of your stove and let the rice rest for 20 minutes.
Tipp: Replace the Tamarinde paste and the Honey for Agave syrup and Orange juice.
